Enju Yakiniku is a truly special restaurant dedicated exclusively to the finest brand of Kumamoto Akaushi — “Enju Beef.”
Akaushi, or Japanese Brown Wagyu, represents only 0.7% of all domestic cattle and a mere 4% of all Wagyu in Japan, making it an exceptionally rare breed. Among them, Enju Beef stands out for its meticulous care and feeding, resulting in meat that is richly flavorful yet remarkably light and clean on the palate.
At Enju, we serve these precious cuts with our signature sauces, gochujang, and soup — recipes passed down from a renowned restaurant in Hiroshima. Enjoy them through our specialties such as “Chunk Yaki” (grilled thick cuts), “Sauce Tasting Yakiniku,” and “Rare Lean Meat Comparison.”

What is “Enju Beef”?
Although Enju Beef was born only three years ago, it has already gained recognition as a “truly exceptional Wagyu” — served in world-class hotels, three-Michelin-star restaurants, and even in luxury suites at a world-famous theme park.
Every aspect of its production reflects meticulous care — from the environment in which the cattle are raised, to the feed they are given, and most importantly, the deep affection and dedication poured into each and every animal.
It is this unwavering commitment to quality and compassion that gives Enju Beef its remarkable flavor, tenderness, and reputation as one of Japan’s most extraordinary Wagyu brands.

At Enju Yakiniku, our mission is to deliver the passion of the producers and the true essence of Enju Beef to our guests in the finest possible condition.
We go beyond simply serving “delicious meat” — our goal is to create a yakiniku experience that satisfies all five senses and touches the heart.

Our Commitment
No.1 — Exclusively Using the Finest Akaushi Brand, Enju Beef
At Enju Yakiniku, we use only “Enju Beef” sourced directly from Harada Livestock, with the sole exception of select items such as U.S. beef tongue.
No other beef is served in our restaurant.
Enju Beef is known for its light, clean fat and easy-to-enjoy flavor, often described as “Yakiniku for those over 50.”
Taking advantage of this unique quality, each of our courses is served in approximately 1.5 times the volume of a typical yakiniku restaurant — yet guests are often surprised by how effortlessly they can finish it all.

No.2 — Our Signature “Chunk Yaki”
Our most popular dish, without question, is the “Chunk Yaki.”
We serve rare cuts of Enju Beef in their bold, uncut form — as a whole chunk.
Guests grill the meat slowly over a shichirin charcoal brazier, adjusting the doneness to their own preference. For the perfect finish, our staff carves it skillfully right in front of you, ensuring the ideal texture and presentation.
With every bite, the natural sweetness and rich flavor of the tender lean meat unfold beautifully, perfectly complemented by our homemade yuzu pepper or a splash of refreshing lemon.
It’s a truly extraordinary experience — exclusive to Enju Yakiniku, where craftsmanship meets indulgence in every moment.

No.3 — Preserving the Flavors of a Legendary Restaurant
The true soul of yakiniku lies in its sauce — the tare.
At Enju Yakiniku, we have inherited the secret recipes for tare, gochujang, and soup from the owner of the legendary Hiroshima restaurant “Nandaemon,” once beloved in the Itsukaichi area.
These recipes are carefully prepared in-house, preserving the depth and balance of flavor that made the original so special. Each drop enhances the natural umami of Enju Beef, creating a taste that is both timeless and unforgettable.

No.4 — Freshly Cooked Rice, a Bowl of Pure Bliss
At Enju Yakiniku, we proudly serve “Akiroman,” a premium rice variety grown with great care by a local farmer in Hiroshima — a close friend of our owner.
We purchase the rice as unmilled brown rice, then polish it freshly at our sister restaurant before each service. Every pot is cooked individually in a traditional kama (iron pot), ensuring perfect texture, fragrance, and warmth for every guest.
The result is rice that’s fluffy, aromatic, and naturally sweet, filling your mouth with the gentle taste of the land.
